Growing up on Vancouver Island, I was an avid fisherman and spent a lot of time surrounded by the Pacific Ocean. I created this dish to pay homage to my roots and to represent the perfect start to a wedding meal - something light and refreshing. The balance of the rich and smoky candied salmon paired with the acidity and freshness of the vegetables is sure to be a crowd pleaser and add a beautiful touch to any evening.

Deceiving in both name and ingredients, this tuna ceviche may seem simple but truly represents simplicity in its finest form. Guests first eat with their eyes seeing the delicious albacore tuna beautifully sliced sitting on seasonal ramp aioli. Taste buds then follow picking up acidity in the homemade lemon oil and pickled asparagus and a final crunch from the Jerusalem artichoke chips. The lightness of this dish will leave guests’ palates and stomachs satisfied, prepared for the delicious courses to follow.

Harissa Spiced Cornish Hen

Chicken is traditionally offered as a main dish at many weddings. Our goal is to elevate a classic and give guests flavours they wouldn’t expect. The above is our newest main dish. Cornish Hens are very tender and the Harissa seasoning provides a little heat while the dill sour cream cools the palate. The dish is bold and the plating is stunning. This is a dish that guests will remember.

Once again we’re seeing a trend towards more sustainable sourcing. Informed and environmentally conscious wedding clients are more interested than ever in how menus and ingredient sourcing can be made as sustainable as possible. Working with Ocean Wise vendors such as Fogo Island Fish and local purveyers such as 100km foods, I've created a beautiful Olive Oil Poached Cod with Handmade Spinach Linguine with locally sourced flour, Roasted Garlic-Grilled Lemon Emulsion, Ontario Brussel Sprouts and Salted Sunchoke Chips.
We love when we have the opportunity to execute family-style inspired events. Serving such a dish that will be shared among guests in this communal fashion, is one of the most joyous experiences we get to participate in. It is always so cheerful, and full of emotion, witnessing people gathering together, sharing food and conversation is nothing short of beautiful.
