This dish is inspired by the beautiful colour palette of fall - deep reds, yellows and oranges, and from travels through parts of Northern Thailand. With local fruits and vegetables moving out of season, we've combined what's left with some great produce rom around the Globe: Green Mangos from Thailand, local green beans and tomatoes, all with a spicy Lat Prik sauce. The sweet Coconut Rice that is served with this dish is like a warm hug - perfect for a colder fall day! Perfect for a station at a big event or a wonderful first course at a sit down affair. The slight accents of chili and salty peanuts will linger, enticing the guest to continue their culinary journey until every last morsel is devoured.
